Thanks to a wonderful contact I have at Adobe, I got the answer to my own question, so thought I'd post it here. Here's the scoop.
To use Acrobat Capture 3.0 to convert from PDF to TXT, use the following workflow steps:
1. Convert to TIF 2. Capture image 3. Bind pages 4. Export to TXT 5. Store TXT
HOWEVER: There's a bug in Capture 3.0 that generates an error when it attempts to convert my files from Acrobat to TIF (files were generated with Acrobat PDF Writer 3.0 for Windows). A similar error occurs with other types of files; I don't have a comprehensive list.
So if the preceding workflow generates warnings when you try to convert PDF to TXT, try using Acrobat 4.0 as follows:
1. Open the file in Adobe Acrobat 4.0. 2. Click the Edit menu and choose Copy File to Clipboard 3. In your word processor, create a new document. 4. Click the Edit menu and choose Paste (or press Ctrl+V). Note that hard line breaks are inserted throughout the document, and document styles are lost, but that would have happened no matter what you used.
