ALL is a special spot color in PostScript Level 2 that will print on all color separations. It is normally used to print crop and registration marks. PitStop's Preflight tool can show you which item is using the spot color.
Most likely, the color All is in the original PostScript file. This can be verified with the DSCVerifier if you have a Mac. Or use BBEdit to search the file for the letters "All" with "Case Sensitive".
The color All could also be created via Distiller's Prologue.ps file if you are using one.
