I've been running Acrobat 6 Pro on a single processor 1.25Ghz G4, MacOS 10.2.6 and 1GB of RAM. Previously, I was running Acrobat 4 on MacOS 9, so can't really comment on Acrobat 5. I find that opening files in Acrobat 6 are pleasantly quick, even some of the more complicated ones. If I distill from Encapsulated PostScript or PostScript files, they process very, very quick. Where I do find it annoyingly slow, is if you try going through the Adobe PDF virtual printer via MacOS X's Print Center, which makes me think there is something broken between Acrobat and MacOS X's print services, as even the most simple files take a long time to produce a PDF, yet PostScript files handled directly by Distiller make PDF's in a matter of seconds, even with complicated newspaper pages.
