To everyone that replied to my post: Thank you for the information. I also posted this on Acrobat Talk, ctp-q and dMacs lists ... I received several responses and very good input from a variety of resources.
To recap and provide you with some info -

It is one of a variety of situations in which Adobe recommends you stick with a "preseparated PostScript workflow" instead of composite PDF files. (Other situations include pubs that use DCS files, most duotone EPS's, most colorized TIFFs.)
It so happens that I just called Adobe (Illustrator 8) tech support regarding the spot-to-spot blending issue, and they said it's no different than in earlier versions of Illustrator. You can blend from a spot to a different screen of the same spot, or to white, and the separations will work (ie they'll print out to spot color plates). But if you blend or construct a gradient from one spot to another, the intermediate steps convert to CMYK. The only workaround is to create two gradient-filled shapes, one for each color, and overprint one.
On the other hand, I've never had a problem correctly outputting spot-to-spot blends made with Quark's CoolBlends feature. (And I guess my printer--who does the film--has been able to figure it out.)
